These are perfect snacks for on-the-go, for before a workout, or maybe as a small breakfast.They are messy to make, but I could eat the whole batch in a day if I wasn't being mindful; they are just such a good combo of things: salty + sweet; protein, fiber + healthy fat. NO-BAKE ENERGY BITES Makes about 2 dozen

1 cup rolled oats 1/2 cup creamy peanut or almond or sun butter (I usually use unsalted) 1/3 cup honey (if using raw, make sure you heat it, so it's liquid to help combine everything) 1 tsp vanilla extract 2/3 cup unsweetened shredded coconut 1/2 cup ground flaxseed (Bob's Red Mill is a brand that many stores carry) 1/2 cup mini chocolate chips (I love the Enjoy Life brand because they're soy, nut and dairy free)

1. In a large bowl, mix together the oats, chocolate chips, and coconut. 2. Add the nut or sun butter, honey and vanilla. Mix until evenly combined (this part takes some muscle.) Add a dash more oats if it's very soup-y. Depending on the humidity + temperature in the air, this may or may not be necessary 3. Chill mixture in the refrigerator for about an hour, then scoop out about a tablespoon and roll into balls - just under an inch in diameter. 4. Store in an airtight container; if it's summer, store in the fridge so they stay in ball-shape and don't just melt into stickyness!

Take a deep breath and appreciate what you’ve just made and are about to enjoy... and try not to eat them all in one sitting :)
