SUNDAY SNACKS (FOR THE SUPER BOWL)

Are you hosting, attending or ignoring a Super Bowl party this year? We're having a few friends over – mostly to watch the commercials (if it's not a close game I get bored, and I'm not a Coldplay fan) and an excuse to get together. 

There will be snacks-a-plenty! We're having a few pre-made/frozen apps from Trader Joe's – veggie pakoras, bird's nests and potato latkes. They're not things we'd eat on a regular basis (they're all pre-fried), but I'm okay with it once in a while. And of course we're also making some things at home:

Guacamole
Can't have a party without guac! Standard recipe is: mash 3 ripe avocados with juice of 1 lime, 1/3 cup diced onion, 2 diced plum tomatoes, 1-2 tablespoons chopped cilantro (or omit, some peoel hate it), 1 small clove minced garlic, few dashes of cayenne, salt + pepper to taste.

I'm not usually a fan of buffalo flavor (the big exception is these), but I've made it for T$ before (she loved wings in college). Our friends offered to make some for Sunday — how could I say no? I have celery to go on the side, because that's a necessity, right? Great way to get your fam to eat more veggies, even on non-football days ;)  

Hummus Dip
Inspired by this, but my version will be layers of red pepper hummus, olive hummus, diced tomatoes, diced cucumber, chopped kalamata olives, with pita chips on the side. The addition of the veggies makes it more exciting than 'just hummus,' and the raw, cold crunchy tomato and cucumber balances out the hot fried TJ's food.

Gluten-Free Vegan Brownies
I'm trying these, because I don't have time today to make up my own recipe, but the batter didn't turn out like hers (my sugar didn't process into a powder and I only used oat flour...) But they taste good! Some of the coconut flavor from the oil comes through, but not in an overpowering way. I also added chocolate chips on top (see photo), that she didn't do. I've also wanted to try these but I don't have any muffin tins right now. If you prefer cookies, try my double chocolate cookies (they also have a secret ingredient.)

Other ideas that were considered but don't have the time this weekend (lots of fun stuff happening, but not a ton of time at home before the Super Bowl)
